In my last post, I mentioned that Susan gave me the idea of eating hummus as a way to get over the meal boredom I was experiencing. I do like a good hummus dish and I usually buy the Sabra brand that can be found in most major grocery stores. It’s too much of a pain to make it myself…
If you’ve been following this blog for a while, this recipe will look very familiar to you.
It’s actually a variation on the beans corn and peas recipe I posted here in the past, but equally good. I replaced some of the ingredients and used hummus instead of salsa for flavoring.
What this does is give the recipe a thicker feel. I’d say that the hummus recipe is better for a cold winter day, while the salsa version would be nice on a summer day since the salsa is lighter and more refreshing.
Ingredients:
1/3 can of black beans
1/2 cup frozen corn
1/2 cup frozen peas
1/3 cup frozen spinach
1 hard-boiled egg
Salt and powdered garlic
2 tablespoons of hummus
Preparation:
1. Pour the corn and peas and spinach into a bowl and microwave for 2 minutes.
2. When the microwave is done, dash some salt and powdered garlic on the corn and peas, and then top them with the beans.
3. Microwave for another minute or two depending on how hot you like it.
4. When done, add the hummus and egg (you can chop it or leave it whole), mix the whole thing, and eat.
I put the ingredients into nutritiondata.com:, and this is what came out:

Protein: 26
Carbs: 62
Fat: 10
